Impressive setup!  Why white for the dash? Just to match?  I figure the glare factor might be iffy...

yeah, the glare could be an issue--which is why I went with flat white and not gloss.  It still "may" be an issue, but I just couldn't bring myself to do a flat black.  Its just so "typical" and that's part of what I'm going for--something unique...

Do you need to include weight of occupants for the overall weight?  If so you need to figure on your co-driver as well...

No, the weight is based on a vehicle sans-people and can be a "dry" weight as well, lacking fuel.
